Almond Sesame Date Bites (pre or post workout snack)
Makes approx. 20 Bites
½ Cup Almonds
½ Cup Almond Butter
1 Cup Dates, pitted (approx 12 dates)
½ Cup Sesame seeds (approx amount)
Directions:
Put almonds in food processor and pulse until they are finely chopped. Remove from food processor and set aside.
Puree dates in food processor. They may form a large ball, but this is ok. Still in the food processor, break up the date ball and distribute it evenly around the bowl. Add almond butter and pulse until everything is well mixed. Add chopped almonds and pulse a few times until they are completely mixed in.
The mixture should be crumbly. Scoop enough of the mixture to make 1-inch balls into the palm of your hand. Press into a ball-shape and place on a flat surface. Gently press ball so that it flattens out and is approx ½ inch thick.
Place sesame seeds in shallow dish. Carefully roll the flattened balls in the seeds until they are coated. You may need to press the seeds into the surface of the balls so they will stick. Shake off any excess seeds and place in an airtight glass container.
Store these balls in the refrigerator or in the freezer.
